Slow Cooker Banana Bread
Preparation time: 5 minutes
Total time: 2 hours
Serves: 4-6

1/2 cup (113g) flour
1/4 cup (56g) light brown sugar
1/4 teaspoon baking soda
1/8 teaspoon salt
1 egg yolk
2 tablespoons vegetable oil
1/3 cup (113g) mashed overripe banana
1 tablespoon milk
1/2 teaspoon vanilla extract
1/4 cup (56g) walnuts, chopped
1/2 cup (113g) chocolate chips
1 tablespoon butter

1. Grease the bottom of a slow cooker with the butter. In a small bowl, mix together the flour, sugar, baking soda, salt and egg yolk. Add in the oil, mashed bananas, milk, vanilla extract, walnuts and chocolate chips. Mix until a batter forms and spoon into the bottom of your slow cooker.

2. Cover and cook on high for 2 - 2.5 hours, or until an inserted toothpick comes out clean.

Pro tip: To ensure that your banana bread stays moist during the cooking process, take a few paper towels and dampen them with water. Place them just beneath the lid of the slow cooker as it cooks.
